Easy Chicken Lasagna Recipe

How to Make Chicken Alfredo Lasagna

This baked pasta recipe is very easy to make with only a few simple ingredients. Bring a large pot of water to a boil over medium-high heat. Cook lasagna noodles according to package instructions for al dente. Drain the pasta and set aside.

Melt butter in a large skillet or saucepan over medium heat. Add garlic cloves and cook for 30 seconds. Whisk in heavy cream. Cook until the sauce has thickened. Remove the skillet from the heat. Season with salt and black pepper. Add parmesan cheese to the cream mixture and stir until the cheese melts.

In a bowl, combine cottage cheese, egg, and parsley. Stir well. Set aside.

To assemble the lasagna, spread half of a cup of alfredo sauce on the bottom of a 9×13-inch baking dish. Layer six lasagna noodles over the sauce. Top the noodles with half of the cottage cheese mixture. Top with shredded chicken and mozzarella cheese. Spread half of the Alfredo sauce over the cheese. Repeat the layers and top the casserole with mozzarella cheese. 

Cover the baking dish with aluminum foil. Bake in a preheated oven. Remove the foil and bake until the bubbly and the cheese is melted and golden brown. Garnish with parsley. Cool for 15 to 20 minutes before cutting into slices.

  • 12 lasagna noodles
  • 4 cups cooked chopped chicken
  • 18 slices mozzarella cheese

Cheese Filling

  • 1 (24-oz) container cottage cheese
  • 2 large eggs
  • 2 Tbsp dried parsley
  • Preheat oven to 375ºF. Spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.

  • Bring a large pot of water to a boil over medium-high heat. Cook lasagna noodles according to package instructions for al dente. Reserve at least ¼ cup of the pasta water. Drain the remaining water and set aside.

  • To make the homemade alfredo sauce, melt a stick of butter in a large skillet over medium-high heat. Add garlic cloves and cook for 30 seconds. Whisk in heavy cream. Cook, stirring frequently, until the sauce has thickened. Remove the skillet from the heat. Season with salt and black pepper. Add parmesan cheese to the cream mixture and stir until the cheese melts. If the sauce is too thick, add a splash of pasta water to reach the desired consistency. 

  • In a bowl, combine cottage cheese, egg, and parsley. Stir well. Set aside.

  • To assemble the lasagna, spread half of a cup of alfredo sauce on the bottom of a 9×13-inch baking dish. Layer six lasagna noodles over the sauce. Top the noodles with half of the cottage cheese mixture. Top with half of the shredded chicken and 6 mozzarella cheese slices. Spread half of the Alfredo sauce over the cheese.

  • Repeat the layers: pasta, cottage cheese, chicken, mozzarella, and sauce. Top the casserole with mozzarella cheese.
