Tutti Frutti Muffins
I always adore how the muffins which we get in bakeries looks so puffy and domed. Lately I came across a post a Facebook group where I saw the recipe for a bakery style vanilla muffin recipe and I simply loved the look of it which made me try it immediately. I made it the very next day and it turned out just perfect. This time I added some tutti fruity in them and it was yum.
What is Tutti Frutti?
Tutti Frutti is a brightly coloured candy made out of chopped fruits which are then candied and has an artificial or natural flavouring added to it. Traditionally tutti frutti is made with raw papaya, which is peeled chopped and candied.
Tutti-Frutti is used in the preparation of cakes and pastries, specially the world famous tutti-frutti ice cream, which is a favourite among children. Tutti frutti can be used in cakes, bread, cookies, buns. It is a fun way to decorate sundaes and ice cream.
About Tutti Frutti Muffins
A muffin is a baked goodie made with basic pantry staple ingredients like plain flour, sugar, eggs, milk, butter and baking powder. This recipe is adapted from my vanilla muffins recipe with added tutti frutti added for colour and taste.
Muffins can be served for breakfast or as a snack with your cup of tea or coffee. This recipe is very simple and can be easily adaptable. You can substitute wheat flour for regular plain flour to make this muffin more healthier. Also chocolate chips, nuts or dried fruits can be added for more taste.

Making muffins is very easy, but you have to follow few things to get bakery style domed muffins. The key for perfect doomed muffin is the amount of leavening agent you add in this. It should be slightly more than the regular recipes. Also when filling the muffin pan, the batter should come right to the top which gives a perfect muffin top. This muffin recipe is just perfect, you can add chocolate chips and nuts in this as well.

Tutti Frutti Muffins Ingredients
Unsalted Butter – Ever wondered why your baked goodies are salty, it is because you have used salted butter. By using unsalted butter, You have complete control over the salt level of your recipe.
Sugar – I used white sugar for this muffin. You cannot substitute it with brown sugar which affects the texture of the muffins. It also prevents the muffins from rising.
Plain flour – For soft texture and taste I use plain flour. You can swap plain flour with wheat flour. Or use half white flour and half wheat flour.
Baking Powder – this is the leavening agent in the muffins. It helps muffin rise in oven and makes it fluffy.
Milk – Whole milk adds soft texture to your baked goodies also helps to adjust the consistency of the batter.
Eggs – Eggs are essential in this recipe which helps muffins achieve the proper texture. If you don’t eat eggs, then you can check my eggless tutti frutti muffins.
Vanilla Extract – adds flavour to the muffins and makes it super delicious.
Tutti frutti – this not only adds colour but gives a chewy bite to the muffins.
Tips for Bakery Style Muffin Tops
Achieving perfect muffin top is not rocket science. You need to do few adjustment in measurements also few baking techniques. Here are my tips for domed muffin top.
1)Rest the batter – Make the batter as mentioned. Don’t over mix the batter and also rest the batter for 15 mins before baking. This allow the starch molecules to absorb and swell create a thicker batter.
2)Fill every other holes – While filling the batter in muffin pan, fill every other hole in muffin tray, this allows the muffins to rise better without disturbing the other muffins baking.
3)Fill as much as you can – fill your muffin pan super full. use as much batter as you can to pack in the mould. I like to fill it upto the top.
4)Increase Baking Powder – the amount of leavening agent you add in this should be slightly more than the regular recipes. Follow my measurements to the ‘T’and you should be rewarded with the perfect muffins.
How to Vanilla Tutti Fruity Muffin
Pre-preparation – Preheat oven to 180 degree C. Line muffin tray with cupcake wrappers. Take tutti frutti in a bowl and sprinkle a tbsp of flour over it. Toss well and set aside.
Making Batter – Take butter, sugar, vanilla in a bowl and cream really well. Add one egg at a time and beat till creamy. Now add in flour, baking powder and mix gently.Pour in milk and add in tutti fruity to make smooth batter.
Baking Muffins – Use an ice cream scoop to fill the muffin cases right to the top. Top with some tutti fruity. Now pop this in oven and bake for 20 to 25 mins. Remove it and cool it on a wire rack. Store it in an air tight container.
How to Make Tutti Frutti Muffins (Stepwise Pictures)
Pre-preparation
1)Preheat oven to 180 degree C | 356 degree F. Line muffin tray with cupcake wrappers and set this aside.
Take tutti frutti in a bowl and sprinkle a tbsp of flour over it. Toss well and set aside. Instead of tutti frutti you can use nuts of chocolate chips.
Pro Tip: Tossing tutti frutti with flour distributes the nuts or dried fruits evenly through out the batter and prevents the candied fruit from sinking to the bottom of the cupcake.
2)You can skip doing this step also, but to be on the safer side I did this. I have used multi coloured tutti frutti which makes the muffins colourful.
Creaming Butter and sugar
3)Take soft unsalted butter in a bowl. I am using a large mixing bowl to make the batter.
4)Add in sugar. As mentioned earlier, you cannot substitute white sugar with brown sugar because it will affect the texture of the muffins.
But you can use brown demerrara sugar or unrefined sugar in this.
5)Add a splash of vanilla which is very important for the flavour.
6)It is best to use electric beater for creaming butter and sugar. But I used my hand whisk. But both work great. If you are using a hand whisk you have to mix it longer till the butter and sugar looks pale and creamy. But using electric beater makes the job easier.
Whisk butter with sugar and vanilla for 5 minutes till it looks creamy and fluffy.
Adding Eggs
7)You need 2 eggs in this recipe. Add one eggs at a time and beat till creamy. Adding one egg at a time will make the mixing job easier.
8)Mix the egg into the butter sugar mixture till it is light and fluffy.
9)Add in another egg and mix well again.
10)Egg is combined with the butter sugar mixture.
Making Muffin Batter
11)Add in plain flour into creamed butter sugar and egg mixture. I am using plain flour but you can use wheat flour.
12)Add in baking powder into the batter.
13)Now use a whisk or spatula to gently fold the batter into the creamed butter mixture.
14)Pour in milk into the batter and fold gently again.
15)Don’t over the batter at this point, use a spatula to gently fold the batter. This prevents the gluten formation which inturn make the muffins denser.
16)Add in tutti frutti into the batter and fold gently.
17)Fold the tutti frutti into the batter gently. This is your tutti frutti batter.
Filling Muffin Moulds
18)I always use my ice cream scoop to fill the muffin moulds. Using this helps me easily divide the batter between the moulds. Also I get equal amount of batter in each mould.
19)When filling the muffin mould, Fill right to the top which helps get perfect muffin top.
Baking Muffins
20)Sprinkle top with extra tutti frutti. This is purely for presentation and it looks pretty when baked.
21)Bake tutti frutti muffins till it is cooked and looks golden brown. Remove the tray from oven and allow it to cool for 10 minutes in the muffin tray before removing from it.
