Crack Chicken Egg Rolls

Air fryer crack chicken egg rolls are an irresistible fusion of flavors that will leave you craving more. Each bite features a savory blend of shredded chicken, crumbled bacon, and gooey cheddar cheese, all enveloped in a crispy, golden-brown egg roll wrapper. Air frying these egg rolls ensures they come out wonderfully crispy without the excess oil, making them a slightly healthier indulgence. Whether served as an appetizer, snack, or main dish, these crack chicken egg rolls are sure to be a hit!

What does CRACK mean?

If a recipe has “crack” in the title it means that the recipe has cheddar, bacon, and ranch in the ingredients. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck. 

According to the dictionary, the definition of crack is “of superior excellence or ability”. We think the flavor combination of cheddar, bacon, and ranch fits this definition! This recipe is most definitely of superior excellence!

How to Make Air Fryer Egg Rolls

These crispy egg rolls are super easy to make with only a few simple ingredients. In a small bowl, stir together shredded chicken, cooked bacon, shredded cheddar cheese, and ranch dressing. Season with kosher salt and black pepper to taste.

To assemble the egg rolls, turn the square egg roll wrapper so it looks like a diamond with a point facing you. Place about 2 Tbsp of the filling in the center. Fold the side points over the filling and then roll it up tightly. Dip your fingers in water and brush the outer edges of the wrapper before rolling to seal the wrappers. You should get around a dozen egg rolls from your batch of filling.

Place the egg rolls in the air fryer basket in a single layer and lightly spray the tops with olive oil spray or nonstick cooking spray. Air fry for 6 minutes. Then, flip the egg rolls and cook for an additional 6 minutes. Garnish with parsley or green onions.

  • You can use any cooked chicken in the filling. Rotisserie chicken, chicken breasts, chicken thighs, or tenderloins work great.

  • Can I freeze egg rolls? Yes! Make the filling and roll the egg rolls as directed. Place the egg rolls on a baking sheet to freeze. Transfer the egg rolls to a freezer-safe ziplock bag or container and store them in the freezer for up to 3 months.
    • To cook, remove the egg rolls from the freezer and place in the air fryer, coating the outsides with oil. Cook at 400 degrees and add 1-2 minutes per side until heated through.
  • Add some coleslaw mix, shredded cabbage, or diced celery to the egg rolls for a nice crunch.
  • Store leftovers in an airtight container in the fridge.
    • To re-crisp leftover egg rolls, heat them in a 350°F air fryer for 1–2 minutes or in a 350°F oven for about 7 minutes.
