Creating a beautiful and delicious puff pastry snowflake is easier than you think! Load it up the most delicious Oregon blackberries and you have a gorgeous and tasty holiday treat!

When you search for a puff pastry snowflake on Google, most of the recipes you will find use Nutella as the filling. Now, I don’t have a single thing against Nutella. We have a Nutella Dulce de Leche Christmas Tree that you can make alongside this blackberry snowflake! But I would choose a berry snowflake over a chocolate-filled snowflake every single time.

We turn to Oregon berries for all of our recipes that use blackberries or raspberries. There simply isn’t a better berry out there! They are juicy and perfectly sweet with just the right amount of tartness.

Why Oregon Blackberries?

I’ve toured Oregon Berries farms several times and I’m floored every time at how dedicated they are to growing the best berries in the world. They truly do have the best flavor of any berry I’ve ever tasted.

Their berries are picked at the peak of ripeness for a better tasting berry. Once they are harvested, they are flash frozen within 24 hours of being picked to lock in the best taste, color and nutrition.

The state of Oregon was also made for growing the best blackberries. It has the perfect climate, optimal soil, abundant water and the right temperatures and air for berry-growing. Oregon blackberries are grown in the USA on multi-generational family farms where local family are stewards of the land supporting environmentally sustainable practices.

Can you tell that I’m their biggest fan? Berries from any other place just pale in comparison.

What Do I Need to Make a Blackberry Snowflake?

You only need 8 ingredients to make this stunning snowflake dessert! Perfect for the holiday season, this flaky treat will leave everyone asking for more! Here is everything you’ll need:

  • Blackberries: you can use either fresh or frozen but fresh blackberries are hard to find in the winter, choose frozen blackberries that say “Grown in the USA” to make sure they are from Oregon!
  • Brown Sugar: adds sweetness and rich flavor
  • Cornaby’s EZ Gel: my new go-to for thickening berry fillings but you can substitute with 1 ½  Tablespoons of cornstarch instead
  • Cinnamon: adds warm flavor
  • Puff Pastry: You could make your own homemade puff pastry but it’s so worth it just to buy a store-bought puff pastry. Find it in your frozen section at the grocery store.
  • Egg: mixes with the water to create an egg wash
  • Water: used to make an egg wash which will help the puff pastry bake up golden and glossy
  • Powdered Sugar: sprinkled over the top to add a stunning snowfall look

How to Make a Blackberry Puff Pastry Snowflake

You won’t believe how easy it is the make such a fancy holiday dessert! It impresses guests and looks like a gourmet pastry chef was behind it. Here is a step-by-step guide:

  1. Prep: Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Make the Berry Filling: Place the berries, brown sugar, EZ gel and cinnamon in a pot over medium heat. Stir until smashed and thickened. Let cool.
  3. Roll: Roll out each sheet of puff pastry with a rolling pin and cut both sheets in two equal circles. Place one of the circles on the lined baking sheet.
    • NOTE: I like to use a large mixing bowl to make the circles and to ensure that they are the same size.
  4. Assemble: Using a spoon or offset spatula, spread the berries in the middle of the puff pastry dough on the baking sheet leaving about a half inch of the puff pastry uncovered around the entire outer edge. Then place the second puff pastry circle on top, seal closed around the edges.
  5. Create: Using a very small bowl in the center of the puff pastry, press gently and lift off, setting the small bowl aside. Using a pizza cutter or sharp knife, make 16 cuts (see section below) going from the mini bowl line to the outside edge. Take two pieces, twist them away from each other and brush with a little egg was on one side then press together to form a tail. Repeat with the remaining wedges until a snowflake shape is formed.
  6. Brush: Using a pastry brush, brush the egg wash all over the snowflake and then sprinkle with sanding sugar if desired.
  7. Bake: Place the cookie sheet in the oven and bake at 400 degrees F for 20-25 minutes until golden brown.
  8. Serve: Dust with powdered sugar. Serve with whipped cream or extra berry sauce.

How to Cut the Slits Evenly

To keep everything symmetrical and pretty, I always cut the first 4 slits (top, bottom, left and right) around the center small circle. Then I cut each of those each of those sections in half, and then each of those sections in half one more time. You end up with 16 little strips bursting out of the center circle.

Why Use Frozen Blackberries

It’s not very often that I recommend using frozen berries, but when it comes to Oregon blackberries, frozen berries have some definite pros.

Since their berries are flash frozen within 24 hours of being picked, Oregon blackberries have freshness locked in! Frozen berries are also available year round, so you can make delicious frozen desserts anytime you want.

They also have a long shelf life so you can buy several bags when they are on sale and then save them in the freezer for whenever you need them! Frozen berries are also more budget-friendly than fresh berries.

Overall, when you buy frozen berries, you are going to find more consistent quality, availability and price.

Snowflake Variations

If blackberries aren’t your thing, then my next recommendation would be Oregon raspberries! There’s just something divine about a berry filling with the flaky puff pastry.

If you can’t find berries, then any type of pie filling or jam will work great! You can also go the chocolate route with Nutella or other chocolate spread.

Where to Buy Oregon Berries

I always buy my frozen Oregon berries in the freezer section at Costco, their Kirkland Three Berry Blend uses Oregon grown blackberries. Since we are using frozen berries, it’s a lot easier to find them in grocery stores anywhere, just look for “Grown in the USA” on the packaging, over 95% of USA grown frozen blackberries come from Oregon!

Storage Tips

Puff pastry snowflakes should be stored at room temperature in an airtight container. They will keep for up to 2 days. I don’t recommend storing them in the fridge as the puff pastry will get soggy over time.

A blackberry snowflake will also freeze extremely well. Wrap tightly in plastic wrap and then again in foil. It will keep for up to 2 months. To reheat, place in the oven preheated to 350 degrees F for 5-10 minutes.

This makes it a great option for breakfast Christmas morning! You can make it ahead of time and just pop it in the oven while you enjoy time with the kiddos opening presents!

    3 Cups Blackberries, 1/2 Cup Brown Sugar, 3 Tablespoons Cornaby’s EZ Gel, 1/2 teaspoon Cinnamon

  • Meanwhile, roll out the puff pastry and cut both sheets in two equal circles. I like to use a large mixing bowl to measure. Place one of the puff pastry circles on the lined baking sheet.

    2 Sheets Puff Pastry

  • Spread the berries in the center of puff pastry circle on the baking sheet leaving about a half inch around the edge. Place the second dough on top, seal closed.

  • Whisk the egg and water together in a small bowl and set aside.

    1 Egg, 1 Splash Water

  • Using a very small bowl in the middle, press gently and lift off, set aside.

  • Using a pizza cutter or sharp knife, make 16 cuts (see notes) going from the mini bowl line to the outside edge. Take two pieces, twist them away from each other and brush with a little egg was on one side then press together to form a tail. Repeat.

  • Brush all over the snowflake with the egg wash. You can sprinkle with sanding sugar if desired.

  • Bake at 400 degrees F for 20-25 minutes and dust with powdered sugar. Serve with whipped cream or extra berry sauce.

    Powdered Sugar

Note: Check the label that they are from Oregon / “Grown in the USA” for the sweetest blackberries.
