What is Easy Pork Afritada?
Afritada is a type of Pinoy meat stew that makes use of tomato sauce for a nice, satisfying thickness, and a good deal of salty flavor. Vegetables also largely characterize this popular local dish. We’ve got components like potatoes and carrots to make this a hearty, nutritious meal. This is a variation of the famous Filipino chicken afritada.
Now for the meat, we not only make use of pork belly. For those who are unfamiliar with afritada, it may shock you to see hotdogs in the stew. But this ingredient provides a slight sweetness, and a great texture to the dish. And as the name implies, which means “pan-fried,” we just fry our pork belly to get a satisfying outer texture for the meat. You will not have to work too hard to make this, as I’ve simplified the recipe, and made it to mostly involve combining the components in certain steps.
What are the Ingredients?
Getting all of the ingredients ready may arguably be the hardest step in this recipe as we have quite a long list. But the effort is worth it as you get to have a delicious share of pork afritada with little hassle! First, get 2 lbs. of pork belly, and cut these into large cubes. Also slice up 3 large hotdogs. As for ingredients that will help out with flavor, we will need 1 Knorr Pork Cube, 16 ounces of tomato sauce, 3 bay leaves, 5 cloves of garlic you’ve chopped, and 1 onion you’ve also chopped. We will also use some salt and ground black pepper.
Let’s check out our veggie components too. Get 2 potatoes and 3 carrots, and cut these into large cubes. We will also need 1 red bell pepper and 1 green bell pepper. Don’t forget 1 ½ cups of water, as well as 3 tablespoons of cooking oil.
How to Cook Easy Pork Afritada
1. Frying the pork
Put your oil in a cooking pot, and let this get hot. Then you can add your pork belly, and fry this. Keep cooking this until the outer part of the meat becomes medium brown. Afterwards, you can transfer the pork to a clean plate. Set this aside for now.
2. Cooking the hotdogs
Now we will put our hotdogs in the same pot. Just fry this for 1 minute, and then take it out of the pot, and set it aside.
3. Sautéing the pork
We’ll still be using the same pot with the oil. Place your garlic and onion inside, and sauté these until the onion softens. Then you can put the pork you fried earlier back inside. Sauté this for 1 minute as well.
4. Letting the pork tenderize
Now pour your tomato sauce into the cooking pot, as well as your water. Wait for this to boil, and then add your Knorr Pork Cube with your bay leaves. Put the cover on top of the pot, and just let this simmer for 1 hour, or until the pork gets nice and tender.
5. Adding hotdogs, veggies and seasonings
We’re nearly done! Just put the hotdogs, potato and carrot inside the pot, and continue cooking for 5 minutes. You can add your bell pepper afterwards, and sprinkle salt and ground black pepper to taste. Now cook everything for 3 minutes more, and then you’re all good to go!
How to Serve Easy Pork Afritada
You can have your pork afritada straight from the pot, but you can also transfer it to a serving bowl. The essential part of serving this would be to have some delicious, newly cooked white rice on the side. And that would be it! Feel free to chow down on your yummy dish that did not take too much effort to create.
How to Store Easy Pork Afritada
This is a dish that you can easily refrigerate. But the rules for storage are the same as most other stews. First, you must make sure the afritada is no longer hot, and is at room temperature. Then you can carefully pour this into a clean airtight container. Place the container in a refrigerator, and you can expect this to last for a good three days. Do note though that you should double check if it is still in good quality before eating or reheating.

How to Cook Easy Pork Afritada

Instructions

Heat oil in a cooking pot. Fry the pork belly until the color of the outer part turns light to medium brown. Remove the pork and place on a clean plate. Set aside.

Put the hotdogs into the pot. Fry it for 1 minute. Remove and set aside.

Using the remaining oil, sauté the garlic and onion.

Add the pork back once the onion softens. Sauté it for 1 minute.

Pour the tomato sauce into the cooking pot. Add water. Let the mixture boil.

Add Knorr Pork Cube and bay leaves. Cover the pot and simmer for 1 hour or until the pork tenderizes.

Add the hotdogs, potato, and carrot. Cook for 5 minutes.

Add the bell peppers and season with salt and ground black pepper. Cook for 3 minutes.
