- Boneless pork chops – You can trim any fat off the pork chops or leave it on for added flavor to the dish. I prefer a medium thickness for the pork chops as thin pork chops tend to dry out easily.
- Pork seasoning – Kosher salt, black pepper, garlic powder. Easily adjust to taste.
- Olive oil – Always use high-quality olive oil.
- Chicken broth – Vegetable broth will also work. Use low-sodium or regular, store-bought or homemade.
- Vegetables: Garlic, onion, zucchini, and mushrooms.
- Canned diced tomatoes – Offers flavor, texture, and liquid to this recipe. A dish wouldn’t be Italian without juicy tomatoes!
- Balsamic vinegar – Adds a delicious balance of sweet and tangy flavor to this dish.
- Sauce seasoning: Bay leaf and dried Italian seasoning. Be sure to remove the bay leaf before serving.
- Sauce Thickener: A cornstarch slurry is a simple mix of cornstarch and water. It’s perfect for thickening the sauce in this recipe.
- Italian parsley – Use fresh parsley for garnish.
🗒 Instructions
This is an overview of the instructions. Full instructions are in the recipe card at the bottom of the page.

- Season the pork chops.
- Turn on the pressure cooker and select the “sauté” mode. Adjust the heat to “more.” Add the oil once the pressure cooker is hot.
- Add the pork chops to the pot and sear on both sides until lightly golden.
- Transfer the pork chops to a plate and add the broth to the pressure cooker. Use a wooden utensil with a flat head to scrape all the stuck bits off the bottom of the pot.

- Return the pork chops to the pressure cooker.
- Add the vegetables to the pot. Then, add the diced tomatoes. Next, pour in the balsamic vinegar. Sprinkle in the Italian seasoning, and add the bay leaf. Finally, add ½ teaspoon of salt and ¼ teaspoon of pepper. Just don’t mix them.
- Secure the lid and close the valve. Select “pressure cook” and adjust the cooking time to 2 minutes. Allow for a natural pressure release for 8 minutes. Carefully turn the vent to “venting,” to release any extra pressure. Press “cancel,” remove the lid, and discard the bay leaf.
- Transfer the chops to a plate with a slotted spoon and cover them loosely with foil to keep warm.

- Make the cornstarch slurry in a small bowl.
- Select “sauté” on the pressure cooker and adjust to “normal.”Add the slurry to the sauce in the pressure cooker and mix to combine.
- Cook the sauce, stirring occasionally, until it slightly thickens, about 2-3 minutes.
- Return the chops to the sauce and serve them together with fresh parsley as garnish.
🥫 Storage
Store these tender Italian pork chops in tomato sauce with veggies in an airtight container in the fridge for 3-5 days. You can reheat the chops in a few ways. Use the microwave, or warm them in the oven. If you choose the oven, cover them with foil to keep them from drying out. You can also use a pressure cooker on the “sauté” mode.
You can also store leftover pressure cooker pork chops in the freezer for up to 3 months. Thaw the chops and the remaining sauce in the fridge overnight and reheat as mentioned above.

📚 Variations
- Add a kick of heat to this Italian pork chop recipe with Ro-Tel canned diced tomatoes instead of regular canned diced tomatoes. A small amount of paprika, red pepper flakes, or cayenne pepper is another easy way to create hot pot pork chops.
- I love the classic Italian vegetables used in this quick and easy Italian pork chop recipe. Feel free to experiment with other veggies of your choice, such as eggplant for Mediterranean pork chops with vegetables. Bell peppers would also be great.
- You can use bone-in pork chops, but then you will need to adjust your cooking time as bone-in chops need about 5-10 minutes longer to cook.
👩🏻🍳 Tips
- Searing the pork chops in hot oil first creates a tasty outer crust. This step also adds flavor to your one-pot pork chop dinner.
- Avoid thin chops when you make these Italian-style pork chops in a pressure cooker. Thin chops are likely to dry out quickly.
- Scraping any bits that stick to the bottom of the pressure cooker after searing the chops is important. It helps prevent a “burn” warning while cooking. Plus, it adds great flavor to the sauce!

🤔 FAQs
This depends on the thickness of the pork chop as well as whether you use bone-in or boneless pork chops. Medium thick pork chops will cook with a light sear and 8-10 minutes in the pressure cooker. Thicker chops or bone-in chops will require 5-10 minutes more.
Sear the chops first as a way to lock in flavor and moisture. Cooking the chops with the sauce mixture on top is another way to keep the chops tender while they cook.
You might be using thinner pork chops. Maybe you’re not adding enough liquid ingredients. Or perhaps you’re cooking the chops longer than the recipe says.
Garlic, whether freshly minced or in powder form, is a great seasoning for pork chops. Onion powder, salt, pepper, and dried herbs like thyme and sage also work well. These flavors really enhance the meat’s taste!
This technique can tenderize the meat so that you get the most juicy and tender chops!
It could be that they are too lean or overcooked.
