Grilled Pork Chop Parmigiano is one of the favorite styles to prepare these chops smothered in sauce and thick slices of melted provolone or mozzarella cheese.

Although most recipes are made with chicken, (the most popular classic is breaded), this is unbreaded and fork-tender with all those delicious Italian flavors with fewer carbs.

Of course, if you would like a  Breaded Pork Chop instead, just adapt this recipe to make a lightly breaded version by dipping in beaten egg and then breadcrumbs first before frying then finish cooking in the oven.

The pork chops are marinated first to be fork tender,  grilled in a gridded cast iron pan on the stovetop, and then finished in the oven topped with marinara and loaded with sliced cheeses.

Our recipe uses a gridded pan to make deep char marks on the stovetop or these can be made on an outdoor grill and finished in the oven.

Easy Steps and Ingredients for Grilled Pork Chops Parimigano

  1. First, marinate the chops
  2. Drain most of the liquid 
  3. In a gridded cast iron skillet then sear the chops to get a bit of a char on the outside
  4. Heat the oven to 400 degrees and finish cooking in the oven with sauce on top
  5. Add the cheese just before the chops are completed cooking and broil until melted

Serving Suggestions and Tips for Making Grilled Pork Chops Parmigiano

  • For grilling outdoors, heat the grill to 400 degrees, and sear the chops on each side for 3 minutes or until a nice char forms. Place the chops in a cast iron skillet, top with sauce and cheese, and place back on the grill until the cheese melts.
  • Chicken or boneless steak can be substituted for pork
  • Marinade for at least 4 hours first then drain off the liquid
  • Always use an instant-read thermometer to ensure the food is safely cooked at the correct internal temperature (pork should be at 145 degrees in the thickest part)
  • For a little heat, add some cayenne pepper to the marinade mixture or a few teaspoons of hot sauce
  • Let the meat rest before serving around 3 minutes
  • Use thawed fresh cuts of meat never from the frozen state
  • Serving suggestions: 
  • cooked spaghetti pasta with marinara or another pasta you prefer

Grilled Pork Chop Parmigiano

Fork-tender Center Cut Pork Chops grilled then topped with a delicious marinara sauce, and thickly sliced melted provolone broiled and browned cheese.

Ingredients

  • 4 center-cut pork chops ( substitute boneless chicken breast, boneless steak or shrimp if preferred)
  • 1 cup or more of marinara sauce homemade or jarred sauce
  • 4 thick slices of provolone cheese or mozzarella (from the deli freshly sliced or use some of both)
  • 1/4 cup of Parmesan Reggiano grated cheese
  • 3 cloves minced garlic
  • 3 tablespoons extra virgin olive oil
  • salt, and pepper to taste
  • Garnish: 4 sprigs of fresh flat leat parsley or 4 large basil leaves
  • Pork Chop Marinade:
  • 3 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 minced fresh basil leaf
  • 3 tablespoons lemon juice

Instructions

  1. Place the marinade in a large ziplock bag with the pork chops, seal, and place in the refrigerator for 4 hours or overnight.
  2. Drain most of the liquid from the bag.
  3. In a gridded style cast iron pan sear the chops on both sides for around 4 minutes or until a nice char on each side is formed.
  4. Note: these can be done on the outside gas or charcoal grill in a gridded cast iron pan. After the meat is cooked add the sauce and cheese then lower the lid down to melt the cheese and heat the sauce. Let cook for around 3 minutes more.
  5. Remove from the pan and place into a casserole dish.
  6. Preheat the oven to 400 degrees.
  7. Add the olive oil and fresh garlic to the pan and set the pork chops on top of the garlic then salt and pepper to taste.
  8. Top with sauce and Parmesan Reggiano cheese and bake for around 10 to 12 more minutes then add the cheese.
  9. Note: Pork should reach 145 degrees internal temperature using an instant-read meat thermometer.
  10. For crispy browned cheese set the oven to broil .
  11. Broil on high heat until the cheese is browned and melted with a crispy topping.
  12. Sprinkle more Parmesan cheese on top before serving.
