Nothing better than Apple Cinnamon Muffins. Fast and easy and perfect for a Fall breakfast or snack. The delicious combination of Cinnamon and Apples will make these muffins your new favourite!

 

I am a muffin lover! From double chocolate to banana and everything in between. To me there is nothing like a muffin with a cup of tea or coffee in the afternoon or even for breakfast. Naturally I would make them for my family also. They have become quite common in Italy now.

Recipe Ingredients

  • Apple – chopped
  • Apple – half sliced
  • Yogurt – plain yogurt, I used whole
  • Milk – 2% or whole/heavy milk
  • Egg
  • Butter
  • Flour – cake or pastry flour (you can use all purpose)
  • Brown sugar
  • Baking powder and baking soda
  • Cinnamon – ground cinnamon
  • Salt

How to make Cake / Pastry Flour

Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.

How to make Apple Muffins

In a medium bowl mix together the yogurt, milk, egg and melted butter.

In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.

Add the yogurt mixture to the flour mixture and stir just until combined. Fold in the chopped apples.

Spoon the mixture into the prepared muffin tin. Top with sliced apples (if desired) and sprinkle with a little cinnamon sugar.

Bake until done, test with a toothpick, if the toothpick is dry or with a few crumb attached they are done. Let cool before serving.

Recipe Tip

For the best soft and tender muffins do not over mix the batter, I like to stir gently approximately 15-16 turns, the batter will be lumpy. Don’t worry the lumps will disappear while baking.

How to make muffins moist?

Adding buttermilk, sour cream or plain yogurt instead of or part of the milk in a recipe will give you a more tender moist muffin. I used plain yogurt in this recipe but you could substitute with greek yogurt, buttermilk or even sour cream. If you use greek yogurt then add an extra tablespoon of milk.

How to tell when the Muffins are done

Touch the muffin lightly on top, if it springs back then they are ready. Or you can insert a toothpick in the centre of the muffin if it comes out clean or with a couple of crumbs attached then they are ready.

  • 1 medium apple chopped

  • â…“ cup + 1 tablespoon brown sugar (80 grams total, if you double the recipe this amount)
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon cinnamon
  • 1 pinch salt

  • Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.

  • In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.

  • In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.

  • Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.

  • Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!

This recipe is made for 6 muffins but it can also  be doubled. For room temperature ingredients, remove from the fridge 45-60 minutes before using.

What are the best apples for muffins?

Braeburn, Rome, Jon Gold, Gala, Granny Smith, Honey Crisp, and SweeTango apples are probably your best choice for muffins. I usually reach for Gala apples.

How to store muffins

The best way to store muffins is to line a plastic bag or an airtight container with paper towels. Then place the muffins on top and cover the muffins with a paper towel. You can store them at room temperature for up to 3 days.

How to freeze muffins

Be sure to completely cool the muffins before freezing, place them single layer in a freezer bag or container. They can be kept for up to 3 months in the freezer. They can be thawed at room temperature.
