Cheese Straws
Delicious and buttery cheese straws which will be your kids favorite. It is very easy to make and taste so flaky and buttery. This recipe is adapted from “Mary berry” cookbook. I am hooked to the recipe book “mary berry 100 sweet treats and puds”. All the recipes are awesome and very easy to follow.
I have already made quite a few of mary berry recipes like these fork cookies, lime lattice biscuits, shrewsbury biscuits, orange drop scones, chocolate ganache cupcakes, double ginger muffins.
About Cheese Straws
Cheese straw is nothing but a simple snack made with cheese butter dough rolled and cut into strips like. The strips are rolled into a cigar or straw like and baked till golden. The dough is made with plain flour, grated cheese, shortening, salt and egg yolk.
Shortening is rubbed into the flour mixture which is then rolled and cut into straw like. These straws are baked and served on its own or with a bowl of hot soup. These makes a great salty snack to serve with cup of tea or coffee as well.
This recipe is easily customisable, you can add any of your favorite fresh herbs or dried herbs in this to make unique flavours.

Cheese Straws Ingredients
Plain Flour – I used plain flour for making cheese straws, you can use whole wheat flour instead of plain flour or use a mixture of plain flour and wheat flour to make this.
Butter or Shortening – I used shortening for the cheese straws which made this so flaky. You can use cold unsalted butter in the dough.
Cheese – grated cheddar cheese is added into the flour mixture to give the cheesy taste to the baked goodie. You can use any cheese that you prefer.
Eggs – egg yolk is the binding agent in this cheese straw. For vegetarian option, you can opt for water.
Optional – This recipe is easily customisable, you can add any of your favorite fresh herbs or dried herbs in this to make unique flavours. chopped jalapenos, dried dill, parsley, chopped garlic can be used.
How to Make Cheese Straw (Stepwise Pictures)
Making Shortcrust
1)Take plain flour in a bowl. For healthier option you can use wheat flour in this recipe.
2)Add a pinch of salt into the flour mixture.
3)Mix the flour evenly into the flour so it distributes evenly.
4)Add in some butter or shortening into the flour mixture.
5)Rub the shortening into the flour so it combines evenly. The mixture should resemble crumbly sand like texture with some clumps.
6)Add in grated cheese into the flour mixture.
7)Mix it lightly with a fork or spoon.
Making Cheese Straw Dough
8)Now add in one beaten egg. This helps binding the dough together.
9)Shape it into a dough like. The dough has to be soft and smooth.
10)Wrap the dough with a plastic wrap or cling film. Place it in fridge and let it rest for 30 minutes in fridge.
Rolling & Cutting Cheese Straws
11)Un wrap the dough. Sprinkle with some flour, roll it into a thick sheet like.
12)Don’t roll the dough too thin or too thick. Roll it between sheets of parchment paper.
13)Once rolled, cut out strips like using a sharp knife. Make sure it looks like sticks.
14)Take one stick and roll it gently back and forth to form straw or a cigar like.
15)Roll the strips like this cigar.
Baking Cheese Straws
16)Place the rolled cigar or straw on a parchment lined baking tray. Leave some gap between each of the cigar.
17)Brush the top with some water very lightly.
18)Sprinkle some grated cheese on top. Because of the water, the cheese will stick to the cheese straws.
19)Bake the cheese straw in preheated oven for 15 minutes or so.
20)Serve.
