With three decadent layers they are so much more than a simple cookie bar! A chocolate base is topped with a creamy layer infused with crushed chocolate sandwich cookies and then topped with more chocolate. It’s the best dessert combining a candy bars texture with Oreo cookie flavor!Â

Recipe Ingredients
- Oreo cookies:Â You will need 14 Oreo cookies including the creamy filling.Â
- Milk chocolate:Â You will need 12 ounces of milk chocolate bar. I recommend using a high quality chocolate bar not chocolate chips.Â
- Butter:
- Heavy cream:Â This may also be called whole cream, whipping cream or heavy cream.Â
Substitutions and Variations
- Type of chocolate:Â I love to use milk chocolate for a true candy bar feel to the candy, but you can use dark chocolate, semi-sweet chocolate or even a combination of chocolate. Using a good quality chocolate is recommended for a richer taste and for the way it melts. Using a low quality chocolate may have different results.
- Two kinds of chocolate:Â If you want even more rich chocolate cookies and creamy candy bar, on top of the milk chocolate layer add a layer of melted white chocolate.Â
- Cream cheese: Instead of a whipped cream layer you can make a cream cheese layer with whipped cream and cheese that has been mixed with crushed Oreos. It will be similar to these no bake Nutella cheesecake bars.
- Type of Oreo cookies:Â Instead of regular Oreo cookies try some of their fun seasonal varieties like mint, dark chocolate, peanut butter or gluten free.Â
- Adding nuts: Feel free to add nuts, sprinkles, or other toppings for extra texture and flavor.
How to Make Cookies and Cream Bars
To start, melt the chocolate in a bowl over a small pot of boiling water or in the microwave until melted and smooth. Pour some of the chocolate on the bottom of the prepared square baking pan then chill.
Next, in a medium bowl whip the cream until stiff peaks form. Set aside.
Separate Oreo cookies then place the white center in a heat resistant bowl. Heat the bowl over a pot of boiling water until the creamy filling is just softened. Fold softened cookie cream into the whipped cream then crush remaining cookie pieces in a separate bowl or bag mix the crumbs with the melted butter to form coarse crumbs.
Remove chocolate base from the fridge, layer with half the crushed cookies, then the whipped cream mixture and then the remaining crushed cookies. Gently press down to flatten.Â
Top with remaining melted chocolate and chill in the fridge to harden.
Decorate then break into pieces and enjoy.Â
expert tips
- Easily crush Oreo cookies:Â After removing the cream filling, place the cookies in a Ziploc bag, squeeze the air out and use a rolling pin to crush the cookies into crumbs.
- Smooth chocolate:Â When melting the chocolate do not let water touch the chocolate. Even a tiny splash of water can cause the chocolate to seize and become stiff and grainy.Â
- Whipping cream:Â Cold heavy cream and chilled equipment will whip your cream into the desired high height.Â
- Cool Oreo cookie cream:Â If you add the warm cookie cream to the whipped cream you risk the whipped cream falling.Â
- Chill layers:Â While this recipe is simple, you do need to exercise patience when chilling the layers! The base first must be chilled before adding the creamy layer and then the chocolate bar needs to be chilled before serving.Â
- Break into pieces: This is a quality homemade chocolate bar and as such it will be hard to slice. I recommend breaking it into pieces when serving just like I do with chocolate covered honeycomb candy!
How to decorate the gourmet candy bar?Â
I love to add some shaved or shredded chocolate but you could even add other candy like I do in this Nutella Kit Kat Oreo ice cream cake or even add some fresh strawberries. I love the combination of chocolate and strawberry in this strawberry whipped cream vanilla yogurt cake.

- 14 Oreo cookies
- 9 ounces milk chocolate (good quality) divided
- 5 tablespoons butter melted
- ¾ cup cream whole, whipping or heavy
EXTRAS
- 2-3 ounces milk chocolate (good quality) grated
Line an 8 inch / 20cm square pan with parchment paper.
Melt the chocolate in a bowl over a small pot of boiling water (make sure water does not touch the bowl), or microwave. Stir until smooth, let cool a couple of minutes. Pour about 5 ounces / 142 grams of the chocolate on the bottom of the pan. Place in the fridge to set.
In a medium bowl whip the cream until stiff. Set aside.
Separate the Oreo cookies, the white center place in a heat resistant bowl. Then crush the cookie part of the Oreo cookies into crumbs mix with the melted butter to form coarse crumbs.
Place the bowl with the white centres of the Oreo cookies over the pot of boiling water and heat just until softened, let cool. Then fold into the whipped cream and set aside.
Remove base from the fridge, layer with half the crushed cookies, then the creamed mixture and then the remaining crushed cookies. Gently press down to flatten. Top with other remaining 4 ounces / 113 grams melted chocolate (if it is hard, just place over boiling water again, let cool slightly). Place in the fridge for a 2-3 hours or even over night to harden. Decorate with shaved or shredded chocolate then cut and serve. Enjoy!
Recipe Tips
Scrunch up the parchment paper before placing in the pan, it won’t move around as much if you do. Use a long serrated knife to nicely cut into bars. Heat the knife under hot water, then dry it off completely before cutting into squares.How to store leftover bars?
