Chicken Stuffed Bell Peppers

Crack Chicken Stuffed Peppers are loaded with flavor in every bite, bringing together tender shredded chicken, smoky bacon, melty cheddar cheese, and creamy ranch dressing—all packed into sweet, roasted bell peppers. These stuffed peppers are the perfect mix of comfort food and freshness, and they’re so good, you might find yourself craving them again and again!

What does CRACK mean?

If a recipe has “crack” in the title it means that the recipe has cheddar, bacon, and ranch in the ingredients. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck.

According to the dictionary, the definition of crack is “of superior excellence or ability”. We think the flavor combination of cheddar, bacon, and ranch fits this definition! This recipe is most definitely of superior excellence!

How to Make Crack Chicken Stuffed Peppers

This dish is super easy to make with only five simple ingredients. Cut four large bell peppers in half and carefully remove the membranes and seeds. Place peppers on a rimmed baking sheet or in the bottom of a 9×13-inch baking dish.

In a large mixing bowl, stir together shredded chicken, chopped bacon, shredded cheddar cheese, and Ranch dressing. Spoon the chicken mixture into the bell pepper halves. Cover the pan with aluminum foil and bake in a preheated oven for 20 minutes. Remove the foil and bake until the filling is bubbly and the peppers are tender. Garnish with fresh parsley or green onions.

What to Serve with Chicken Stuffed Peppers

Crack Chicken Stuffed Peppers are creamy, cheesy, and packed with flavor, so they pair wonderfully with a few simple sides that won’t overpower their rich taste.

  • A crisp, fresh salad with mixed greens, cherry tomatoes, and a zesty vinaigrette complements the savory filling beautifully, adding a burst of freshness to the meal.
  • Roasted or steamed vegetables, like broccoli or asparagus, work well too, adding a tender crunch without competing with the bold flavors of the stuffed peppers.
  • For something a bit more substantial, serve with a side of cauliflower rice or a simple quinoa salad to keep things light yet filling.
  • And if you’re looking to round it out with a little indulgence, garlic bread or a buttery dinner roll is perfect for scooping up every last bit of that delicious crack chicken filling!
