- 2 tablespoons butter
- 3/4 cup chopped onion
- 1 (12-ounce) can of evaporated milk
- 1 (10.5-ounce) can of condensed cream of mushroom soup
- 3/4 cups water
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 1 teaspoon dried thyme
- 2 pounds skinless, boneless chicken breast halves, cut into 1 1/2-inch chunks
- 1 (6- ounce) can sliced mushrooms, drained
