About Hot and Sour Dumpling Soup

Dumpling soup is my latest obsession. This recipe uses minimal ingredient like garlic, spring onions, red chilli flakes as base flavour. It is bloomed with hot oil which adds aroma. The taste is balanced with vinegar, sugar and soy sauce. I used store bought dumplings also known as momos for this recipe. But you can make homemade too.

I used hot vegetable stock for the base. Chicken stock can be used instead of vegetable stock.  Any cooked vegetables and cooked protein can be added in the soup. You can use bok choy, bamboo shoots, baby corn, spinach or broccoli. Protein like tofu, prawns, chicken can be used in the soup.

This soup requires minimal cooking, you just need to cook momos separately and heat oil alone. It is one of the easy soup recipe you can ever make. For more substantial and filling soup, add cooked noodles, cooked vegetables in the soup. Pan fried tofu can be added in the soup as well.

Garlic – I love adding lots of chopped garlic in the soup, it adds aroma that cannot be achieved by any other ingredients.

Chilli – hot flavour of the hot and sour soup comes from the chillies used in the soup. I used Korean red chilli powder called as gochugaru, you can use chilli flakes or chilli powder.

Spring Onions – you can use spring onions in this soup. It adds mild onion flavour to the soup.

Oil – use neutral tasting oil which is hot to bloom the spices and garlic.

Seasonings – I used soy sauce, vinegar, sugar as seasoning for the soup.

Stock – I used vegetable stock as soup base, you can use water or chicken stock.

Dumplings – I used store bought dumplings also known as momos for this recipe. But you can make homemade too.

Sesame seeds – use roasted sesame seeds for topping which adds a mild sesame flavour and nutty taste.
