Lean & Rich Bakery has croissants and pastries in Fort Canning

In case you didn’t know, there’s a hot new addition to UE Square: Lean & Rich Bakery. The pastries here are touted to be exceptional, owing to the Korean baker’s five years of experience in some of the most premium pastry kitchens, including Tartine.
This new cafe boasts a simple Nordic-style minimalist theme, but the true sight here is the array of meticulously crafted pastries and bread.

Before opening Lean & Rich Bakery, owner Hong Ui Chang fronted the famed US bakery, Tartine, in Seoul, and was an executive baker in Figment—a bakery specialising in sourdough bakes.

The menu here operates on a relatively novel concept. There are two types of fresh bakes: one made with lean dough and the other with rich dough. Also, the bread and pastries are baked across three batches in the morning, so you can expect the aroma of freshly baked bread wafting through the air if you are heading down for breakfast.

Let’s start with the lean dough: this is made using flour, water, salt, and yeast. In this category, you can expect lighter bakes such as Sourdough Bread (from $8), Rye Bread (from $10), Gorgonzola Pecan Sandwich ($8), Flat Bread (price TBD) with olives, and the Morning Bun (price TBD) which you can enjoy with whipped butter and honey on the side.

The rich dough, on the other hand, also has eggs, butter, sugar, and milk. You can expect decadent and flaky French-inspired viennoiseries that come in Plain ($4.50), or a variety of flavours depending on the availability: Chocolate ($5.50), Vanilla ($7), Pistachio ($7), Seed Cinnamon ($6), and Ham & Cheese ($7.50).

We’ve seen some reviews online that the bakery offers freshly brewed coffee too. Get your caffeine fix or pair it with your bakes for a delightfully satisfying breakfast. Prices for the coffee start at $3.50 for an espresso!
