Sukku kaapi is also known as Sukku malli kaapi, Karupatti kaapi is a flavourful Indian spiced coffee made with whole spices like coriander seeds, pepper, dry ginger and cardamom very similar to sukku paal. In this blog post, I have shared sukku coffee mix and sukku karupatti kaapi with step by step pictures and video.

This kappi really works wonders, you can make them in bulk and keep covered. Then reheat it and consume them through out the day. You will find considerable relief immediately.

Sukku kaapi or Karupatti kaapi as Aachi calls them is a medicinal tea which can be made easily at home. The only time consuming part is making the sukku powder and Karupatti syrup. You can make it in bulk and store them in an air tight container in fridge. So you can make it as you like.

About Sukku kaapi

Sukku kaapi is also known as Karupatti kaapi, dry ginger coffee or Sukku malli kaapi. It is a medicinal drink made with whole spices like black pepper, coriander seeds, cardamom and dry ginger. The combination of these spices create a herbal tea that gives perfect relief from cold or cough. 

Aachi makes Sukku kaapi podi using dry ginger, coriander seeds and black pepper alone. But I like to add little cardamom for flavour. You can even add a pinch of cumin seeds and cinnamon for added flavour. But I don’t prefer cumin which might alter the original taste of Karupatti kaapi. Meanwhile check my karupatti mittai and karupatti pudding.

You can make this coffee many different ways which I have shared in this recipe post. You can make this drink caffeine free with just the powdered Sukku mix, Karupatti and water. If you want some caffeine in the morning, add a tsp of coffee powder when boiling the mixture. Also if you are making this for kids, then you can add some milk in the end before serving to make the coffee lighter. 

Here is a hack which I follow when it comes to roasting spices. I prefer to use my oven, for roasting dry ginger, spices. Usually I take all the whole spices, dry ginger in a baking tray. Pop them into a 180 degree c preheated oven and bake for 10 minutes. This makes the spices toasty and well roasted. Once the spices are cooled, you can powder them.

Dry ginger – use best quality dry ginger in this recipe. The main flavour and benefits of Sukku kaapi comes from dry ginger so source the best quality. You can use dry ginger | Sukku with skin or without skin. 

Coriander seeds – coriander seeds helps with digestion, roasted seeds adds a floral aroma to the drink. It has anti inflammatory properties which is great when you are not feeling well.

Black pepper – pepper helps to reduce cold and cough which also cures stomach wounds. Make sure you use little black pepper and not too much. 

Cardamom – this is optional, but it adds a floral aroma to the drink.

Palm jaggery – palm jaggery is also called as Karupatti. You can replace Karupatti with jaggery or palm candy (panangkarkandu). Depending on the sweetness level, you can add more or less as you prefer. 

Sukku malli mix – ingredients used in the mix is pungent and strong. So always start with a little and increase it gradually. Remember the longer you steep, the more intense the drink becomes. 

Coffee powder – this is optional, some people prefer some caffeine in their tea. Specially when they are consuming this on regular basis as a replacement for their daily tea or coffee. 

Milk – milk lightens the intense Karupatti flavour. But remember you shouldn’t add milk when the mixture is boiling, which makes it curdle. I like to add milk into the tea after it is poured in serving glass.

Variations ( 3 ways)

Caffeine free Sukku kaapi – this is my favorite way of consuming Karupatti kaapi. I use palm jaggery syrup, water, Sukku malli mix for brewing the coffee. I sometimes add few sprigs of mint, tulsi when brewing the coffee for added flavour. 

Sukku kaapi with coffee powder – some people prefer some caffeine in their tea. Specially when they are consuming this on regular basis as a replacement for their daily tea or coffee. If you want some caffeine in the morning, add a tsp of coffee powder when boiling the mixture. 

Sukku kaapi with milk – if you are making this for kids, then you can add some milk in the end before serving to make the coffee lighter. Milk lightens the intense Karupatti flavour. But remember you shouldn’t add milk when the mixture is boiling, which makes it curdle. I like to add milk into the tea after it is poured in serving glass. You can use dairy free milk like soy milk, almond milk, coconut milk instead of regular milk.

For best tasting Karupatti kaapi 

Make powder in bulk – you can make a big batch of the Sukku malli mix and store in store cupboard or fridge. This powder stays fresh for many months. 

Quality ingredients – since this recipe uses minimum ingredients, the flavour and taste depends on the quality of ingredients you use. 

Experiment with flavours – you can add any herbs or spices that you prefer when brewing the coffee. Specially mint leaves, tulsi, cinnamon can be used for a variation in flavours.

How to Make Sukku Kaapi (Stepwise Pictures)

Roasting Spices (Stove top or oven)

1)Take coriander seeds, pepper and cardamom in a dry pan. Start roasting on low heat for 4 to 5 minutes until roasted.

2)Now the spices are roasted. take this in a bowl and set aside so it cools completely.

Making Sukku Kaapi Powder

4)Take dry ginger in a blender. powder them fine.

5)Now the dry ginger is crushed.

6)Add in the roasted cooled spices into the dry ginger.

Making palm Jaggery syrup

8)Take water and palm jaggery in a sauce pan. You can make a big batch of this syrup and store in fridge.

9)Heat until palm jaggery melts. Once it is melted, Bring the syrup to a full boil and boil for 4 to 5 minutes until it gets slightly sticky.

10)Now strain the syrup through a sieve in a clean dry bottle.

11)You can store the syrup in fridge until needed.

Making Karupatti Kaapi

12)For making karupatti kaapi. Take water in a sauce pan.

13)Add required amount of palm jaggery syrup. heat this so it gets hot.

14)Add in the sukku kaapi powder. Simmer for 2 to 3 minutes.

15)let the coffee cook on low heat for few minutes.

16)Add in the coffee powder. I used filter coffee powder.

17)Simmer for 2 more minutes. Take it off the heat.

18)Strain the sukku coffee through a sieve.

20)You can serve sukku coffee as it is. or mix some milk. But remember you shouldn’t add milk when the mixture is boiling, which makes it curdle. Expert Tips

  • Karupatti or palm jaggery has dirt and dust in them, so boil and filter them before using in tea.
  • Fresh holy tulsi leaves can be used when brewing for flavour. 
  • You can add as much mix as you want. 
  • Don’t add milk when the mixture is boiling, which will make the curdle.
  • You can use jaggery powder or palm candy instead of palm jaggery.

Ingredients

  • Palm candy 1.5 cups
  • Coriander seeds ¼ cup
  • Dry ginger ½ cup 
  • Black pepper 2 tsp
  • Cardamom 5 

How to make Instant Sukku kaapi mix

  • Dry roast coriander seeds, black pepper and cardamom till aromatic. Set aside so it cools.
  • Take dry ginger in a blender and powder till fine. Add the roasted spices and powder again. store this in an air tight container. 
  • For making instant drink. Boil water or milk, add couple tbsp of the mix and boil. Simmer for few minutes. Strain and serve hot.
